Courgetti Bolognese With Cacao

The rich taste of our Super-Cacao adds a lovely depth of flavour to this bolognese recipe created by Aduna Feel Good Triber Charlotte. Based on the classic Italian dish, this version uses a lighter alternative 'courgetti' and can be easily adapted for different meat and protein sources. It's also great for leftovers, in fact we think it tastes even better the next day! 

Serves 4

INGREDIENTS:

1 tbsp Aduna Super-Cacao Powder
400g lean mince beef
1 red onion
2 cloves garlic
1 can tinned tomatoes
1/2 can of water
2 tbsp tomato purée
a sprinkling of dried mixed herbs
1/2 tsp paprika
black pepper and sea salt
4 courgettes
coconut oil (optional)

METHOD:

Finely dice the onion and add to a pan along with a little coconut oil or water. Sauté until the onion starts to cook through and then add the crushed garlic. Add the mince and cook over a medium heat, stirring occasionally until the meat is browned. 

Pour in the tinned tomatoes and add half a tin of water. Stir in a sprinkling of mixed herbs, the tomato purée, cacao powder and salt and pepper to taste. Place the lid on the pan and leave to simmer for about 20 minutes to allow the sauce the thicken and the flavours to deepen.

Spiralise your courgettes and either serve raw or fry lightly in a pan. Serve with the bolognese sauce and any toppings of your choice (I've used feta cheese).
